Today is my little dude's 5th birthday. Isn't he beautiful?! Ha.
The Hubbs really likes Chinese and I'm really tired of eating out. Like, really tired. I want to cook every meal we eat, but the Hubbs is addicted to fast food and take out. So I made Bourbon chicken. It doesn't have any Bourbon in it.
1/3 cup brown sugar
1/3 cup water
1/3 cup low sodium soy sauce
1/4 cup apple juice
2 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp cornstarch
2 tbsp ketchup
1 tsp minced garlic
1 tsp crushed red pepper
You'll also need 1 and a half chicken breasts cut into cubes. (I only had to cook two portions because he doesn't work tomorrow).
Add the oil and the chicken to a pot. Cook until chicken is done.
Drain the liquid all out and set the chicken aside. Wipe the pot out.
Add the chicken back and cook it until it starts to brown a little.
Add everything else to a small mixing dish.
Whisk it until everything is broken up and mixed together.
Add all the liquid to the pot. Put a slightly ajar lid on and cook for 20 minutes, stirring occasionally.
