Crispy Asian Baked Wings

Again, not a fan of Asian food.  At least the food you get in most Asian restaurants.  Blech.  But these wings were delicious.  This recipe is entirely my own creation and it went quite splendidly.  :)

I used a pack of the little leg portions of the wings.  Drummettes or whatever.

I recommend getting some parchment paper or foil and a metal rack before cooking these.  They'll get much crispier.

Preheat your oven to 400.
Get a tablespoon or so of olive oil.
Put your chicken wings in a gallon size bag and add the oil.
Put them out on the rack.
Sprinkle them with salt and pepper.
Put them in the oven for about 50 minutes.
Put them in a mixing bowl.
In a separate bowl mix together:

1/4 cup of blackberry jam
1/4 cup Hoisin sauce
1 tablespoon of Louisiana hot sauce
1 teaspoon of crushed red pepper
(These are not spicy at all)
Now mix it up until smooth.
Pour it over the wings and stir them up.
Serve it with fried rice, or eat alone.

These were delicious, and I wish I'd fixed more of them.
