I'm Going to Come Back!

Hey, guys!  I know I've been gone for awhile. I was working and not cooking at home a lot.  Not that that is much of an excuse.  But!  I've got news that'll make up for it.  I'm 20 weeks and 4 days pregnant!

We're having a little girl, that we're naming Cerridwen Artemis! She's due at the end of May. So far everything has been great. Except for the constant morning sickness, the fact that I've lost 16lbs, and two trips to the E.R. (stomach virus and the flu).

Refried Black Beans

I'm sorry that I've been away.  We've been busy with stuff at the house. Our drain pan in the furnace was overflowing, so we had to pull up part of the brand new flooring in the laundry room because of the water.  But thankfully my dad ran a HVAC business for 30 years.  Hubbs and dad fixed it yesterday.  Now we're just waiting for the rest of the water from the insulation to finish draining out, then we'll be able to finish the laundry room.

And I have more exciting news!

I GOT A JOB!!!

I start at Burke's Outlet on Wednesday.  Woot woot!  I've spent two years trying to find a new job since I quit Subway.  It's 20 cents less than what I was making at Subway when I quit, but after 6 years, I was only making 8 dollars.  That was 75 cents above minimum wage.  I had to nearly BEG for a raise from my old boss. 

Now I'm going to be doing school, DNA testing, and cashiering.  I'm just so excited.  But I've never worked at a job where I actually get a lunch break.  I never got a break when I worked at Subway.  I had to find a chance to take a minute long break between customers.  I'm so excited.  Downside is that this coming weekend is Tax Free weekend in TN.  And I'm 99.9% sure that I'll have to work. And I am COMPLETELY OKAY WITH THAT!!! AH!

Okay, now for the recipe.  I'm just doing a simple one for this post because I've got clothes that need to be washed (my sneakers are in there right now) and dishes that need to be put away.  So here is refried black beans.

You'll need:
1 can of black beans
1 minced garlic clove
1/4 teaspoon of cumin

Add a little bit of oil to the skillet and cook the garlic until soft.

Add the entire can of beans (I really hate this part because there is so much sodium in this, even with the low sodium beans).

Mash the beans then add the cumin and mix together.

I served them with taquitos.  That my husband didn't like (because they had veggies in them).

Chicken and Mushroom Gravy

I really don't know if that's exactly what you'd call this.  It's not really a mushroom gravy.  It's more chicken with mushrooms and gravy.  It was tasty, but not the prettiest thing I've ever made. We didn't actually get to have it for dinner (I don't remember why now), so the Hubbs took it with him to work the next day.

I know I've been away for a bit. We've had a ton going on and I'm job hunting so we can save up some extra cash to do some renovations to our house. Like the upstairs bathroom that flooded our living room.


I used:
1 cup of sliced mushrooms
1 cup of chicken broth
1 small onion
1/4 cup of flour
1/2 cup of unsalted butter
2 garlic cloves, minced

I put the onions, garlic, and mushrooms over the chicken.

Mix the broth and flour together.

Add it to the glass dish.

Sprinkle the butter over it.

Bake for 20 minutes in a 400 degree oven.

If we had been able to eat it that night, I would have served it with broccoli or squash.

Chicken Gravy

You know how they say "When it rains, it pours"? Well, yesterday I was brushing my teeth upstairs, turned the water off, went to use the bathroom, and heard a hissing noise.  The hose that does the hot water had sprung a small leak. And it was spewing out scalding hot water. In my efforts to stop it, the hose developed about seven more leaks.  Those leaks became a river and the water started pouring down into the living room below. Thankfully, we have a drop ceiling and we only had to take down three tiles and let them dry. But now what was going to be a kitchen remodel is going to have to be an upstairs bathroom remodel.  The vanity is ruined, we had to replace the hoses, we've discovered that there's no insulation in our ceiling (which after the water is kind of a blessing.

Also, thankfully our upstairs bathroom is very small.  We'll need a vanity, lights, flooring, wall paint, bath paint, and a new shower curtain.  And I'll tutorial it as we go. 

Okay, now onto something tasty and less house destruction-y. 
Okay, you're going to need:
1 cup of chicken broth
3 tablespoons of butter
2 garlic cloves, minced
1/4 cup of flour
1/4 teaspoon of salt
1/4 teaspoon of pepper
1/4 teaspoon of garlic powder

Melt the butter in a skillet.

Cook the garlic until it's slightly browned.

Add all the dry stuff to the flour.

Add it to the butter and cook it until the flour is just browned.

Add the chicken broth to flour mixture and whisk it until thickened.

Strain the garlic cloves out of the gravy.

Serve over potatoes for a delicious side.

Paprika Roasted Potatoes

So the Hubbs and I have decided that we need to start eating healthier again. We'd lost focus on that but now we're going to buckle down and start.  This month actually makes a year since I've had a soda. It's been great. I feel so much better than I did a year ago. It was a rough transition though. Aside from going out to a sit down restaurants (Logan's, Applebee's, etc.) all I ever had was soda. Dr. Pepper. Pepsi. And oh the caffeine. I was drinking 3-4 Redbulls and energy shots a day just to keep going.  When I went cold turkey, I honestly thought I was gonna die. The headaches were absolutely awful.  But I made it. And the temptation to drink them even went away.  Now even a sip of a soda will make my stomach hurt. If I can do it, so can you.

I don't even remember when I made these, but it was a few weeks ago.  They were delicious too.  It's no secret that I do have favorite spices. Paprika being one of them (cumin being the other). And it's no secret that the Hubbs loves potatoes.  What better dish to make then?

First you're going to need to quarter some red potatoes. I did about 8.

Then you'll need:
1 cup of chicken broth
2 tablespoons of oil
2 teaspoons of paprika
1 teaspoon of cayenne
1/2 teaspoon of black pepper
1/2 teaspoon of Kosher salt
3 minced garlic cloves

Saute the garlic in the oil until browned

Add the potatoes

Add the other spices.

Add the liquid.

Stir it and put a lid on it. Cook over medium heat, stirring occasionally, until the potatoes are soft and browned.

I served these with chicken breasts (though I don't have a picture of it).

Garlic Baked Chicken

I know it's been a few days since I've posted.  We've been helping my brother-in-law and his wife with their new house.  And my knee has been killing me, again.  But now I'm going to post the chicken that went with the Cacio e Pepe  that I posted the other day.

You're going to need:
6 whole garlic cloves, peeled and left whole
1/2 teaspoon of cayenne
1 tsp of onion powder
1 tsp of garlic powder
1 tsp of red pepper flakes
1/4 cup of olive oil

Mix the olive oil and spices together.

Add it all to a gallon size baggie and allow to marinade for at least an hour.

Add to a casserole dish and bake at 400 for about 30 minutes, or until the chicken is done and the garlic clothes are soft and brown.

They should look like this.

It was delicious. :) I'm going to try to start adding some DIY stuff to the extensive list of recipes that I've got going on. :)

Creamy Garlic Shells

Again with the pasta, I know.  I'm awful.  But this is technically a one pot dish too.  This was really, really good too.  The Hubbs and I could probably eat pasta every day. But our waistline may not like it.

First, you're going to need 1/2 a pound of small shells.
Boil them until they're al dente, drain, and then set aside.

Don't let the ingredients scare you.  You'll need:
1 tablespoon of olive oil
1 tablespoon of butter
2 garlic cloves, minced
2 tablespoons of flour
3/4 cup chicken broth
3/4 cup 1% milk
1/2 teaspoon of garlic powder
1/2 teaspoon of black pepper
1/4 cup of grated Parmesan
Melt the butter in the oil.
Cook the garlic in the butter/oil until soft.
Add the flour and cook until you've got a nice rue.
Add the milk and broth, whisk/stir until it's smooth.
Add the pepper and garlic powder, allow to bubble away and thicken for 4-5 minutes.
Add in the cheese and stir until melted.
Add the pasta back to the pot.
Stir until combined and covered.
Serve as a side with garlic baked chicken.  That recipe will be coming soon.
